The cheese is produced from pasteurised milk from their own flock which graze on pastureland on the Cratloe Hills. It is a natural product manufactured in a traditional way with no additives or flavours. The product is 100% sheep's milk using only a vegetarian starter, rennet & salt.

The Mild Cheese has creamy flavours with a very distinctive after taste. The Mature cheese is hard, slightly drier and the taste is more robust giving a complexity of flavours.

Mild is available all year round in rounds or vac packed portions from 125gm to 450gm also available in 2.5kg rounds.

Mature is available in 2.5kg rounds and also in vac packed portions from Oct to April.
